Call pumpkin spice basic all you want, you won't be able to resist this 🎃🍞
4 tbsp of unsalted butter, softened
1 3/4 cups of all purpose flour
1/2 tsp of salt
1 tsp of baking soda
1/2 tsp of baking powder
1 tsp ground cinnamon
1/2 tsp of freshly grated nutmeg (or not freshly grated bc #lazy)
1/4 tsp of allspice
1/4 tsp of ground cloves
1/4 tsp of ground ginger (TBH this is a lot of spices, if you want to cheat and go for 3 tbsp of pre-mixed pumpkin pie spice instead, I won't tell)
Splash of vanilla
1 1/2 cups of sugar
1/4 cup of vegetable oil
1 cup of canned pumpkin puree
2 large eggs
2/3 cup of water
Preheat your oven to 350℉ and butter a 9-inch loaf pan.
Whisk together dry ingredients (flour, salt, baking soda, baking powder, and allllll the spices) in a bowl.
In a separate, larger bowl, beat together the butter, sugar, and oil on high speed until light and fluffy. Add vanilla and pumpkin puree and mix until combined.
Add eggs, one at a time, and mix until incorporated.
Mixing on low speed, slowly add dry ingredients and water, and mix until combined.
Spread batter into the buttered pan and bake until a toothpick inserted into the center of the loaf comes out clean, at least 1 hour.
